Description: !*! Supervise the daily operations and food production for several dining units within Willard Straight Hall (WSH). Under the direction of the General Manager for Cornell Dining oversee the food production of a multi-complex retail operation, collaborate closely with the Operational Manager, Assistant Manager, other Chefs and bargaining unit staff to provide world-class food service to the central campus of Cornell University. Food service operational oversight includes: an-all-you-care-to-eat dining facility, hot commissary, a catering operation, a bakery and a retail operation.%0A %0A In this role you will:%0A%0A * Possess and demonstrate a record of commitment to diversity and inclusiveness. Strive to foster a climate that doesn't just tolerate differences, but treasures them.%0A * Maintain a world-class Dining operation supporting Cornell's culture, values, and goals.%0A * Coordinate, supervise, and schedule food service production staff in the preparation and presentation of food for approximately 2000 meals per day for the customer with an annual operational budget in excess of %243.2 million.%0A * Ensure an environment where all staff are valued, respected, and encouraged to develop their skills through training and educational opportunities. Attract and recruit exceptional talent; encourage staff throughout the organization. Ensure compliance with health and food safety regulations and best practices%0A * Use computer technology to complete office tasks, calendar maintenance, menu planning, costing and inventory tracking.%0A%0A This position requires creative thinking and situational problem-solving, may include resolving unexpected staff issues, quickly modifying menus, completing meal service without the expected staff or equipment resources, and adapting to special event particulars.!*! Required Qualifications:%0A Formal training of two years, two years of college coursework, or Associate's degree. Training in a culinary program - Associate of Occupational Science (A.O.S.) preferred or equivalent work experience. More than three years experience. Exceptional interpersonal skills. Extensive experience supervising a Dining staff. Proven ability to manage bargaining unit and student staff including direct supervisory responsibilities. Effective communication skills, with exceptional organizational skills.Strong technical skills, facility with standard desktop programs, basic understanding of food service management systems to regularly use a computer to complete office tasks and calendar maintenance. Required to utilize this software for menu planning, costing and inventory tracking.Experience in working with clients and staff on large events ranging from 200-1000 people. Position requires various hours including nights and weekends.%0A %0A Preferred Qualifications:%0A Experience in a high-quality collegiate dining program. Strong understanding of food service management systems. Familiarity with board plan operations and menu cycles a plus. Culinary and food safety certification desirable.
